Chicken
1. Marinade chicken chops with turmeric powder and salt for at least 10 mins.
2. Shallow fry chicken till outside cooks, for only 2-3 mins.
Spices
1. Remove chicken and toast cardamom, cinnamon, star anise and cloves till fragrant.
Sauce
1. For the sauce, blend soaked dried chillies, garlic, ginger, galangal, lemongrass, red onions and a bit of water till smooth.
2. Add paste to the pan and fry till oil splits.
3. Add chopped tomatoes and tomato puree.
4. Season with salt and palm sugar.
5. Add the chicken and cook for at least 30 mins, or until the sauce thickens into a gravy consistency.
6. Chop chicken into bite size pieces and top them off with mozzarella cheese.
Taco
1. Combine water, salt, melted butter and flour in a bowl.
2. Knead till smooth and rest in the fridge for 30 mins.
3. Divide the dough into mini dough balls and roll them as thin as possible.
4. Fry them in a pan till browned.
5. Store them in a cloth to prevent moisture loss.
Pico de gallo (salsa)
1. Chop tomatoes, onions, coriander, and chilli/jalapeno.
2. Combine them in a bowl with juice of 1 lime and season with salt and pepper.
